Evacuation plans give anyone who enters your facility the location of fire exits, escape routes, fire extinguishers, pull alarms, and lets them know where they are in relation to each of these things. When you visit a facility daily you probably know how to get out quickly, but when you're in an unfamiliar environment, an evacuation map is your key to getting to safety when an emergency occurs. NFPA signs are required by law and identify the stair number, roof access (or lack thereof), floor number, and the lower and upper terminus (exit) level.
